As we celebrate Washington Wine Month in March, Taste Washington has gone virtual this year with a series of themes and special to go menus. Aerlume will be featured as part of the Chardonnay and Catch of the Day theme, and Chef Maggie’s dish was inspired by the hope of spring and the fresh flavors that the season brings. The classic Northwest flavors of grilled wild King salmon paired with braised wild mushrooms, onions, carrots and radishes get a tasty zing and pop of color from spring pea edamame hummus.
Paired with the 2017 Passing Time Chardonnay, the richness of the salmon is balanced by aromas of toasted bread, apple, pear and subtle hints of vanilla from the wine. Lingering notes of crème bruleè and butterscotch create a strong, yet elegant finish.
